Vegetable or corn oil, for deep frying
2 cups fine stone-ground white cornmeal
1 tablespoon sugar
2 teaspoons baking soda
2 teaspoons salt
1 tablespoon minced onion
1 large egg
1 cup buttermilk
5 tablespoons cold water, as needed
HEAT the oil in a deep fryer to 360°F.
IN A LARGE BOWL, sift together the cornmeal, sugar, baking soda, and salt. In a small bowl, combine the onion, egg, and buttermilk and beat until frothy. Pour the buttermilk mixture into the cornmeal mixture and stir lightly to mix. Add just enough of the cold water to make a good dropping dough.
